This particular smoker was a special project that went into the back of a toy hauler. The end result is a mobile cooking unit that passes all of the health department guidelines and restrictions.
This unit was double walled and insulated as well. The inside wall is made with 10 gauge stainless steel. The outer wall is made using 18 gauge stainless steel. There is 1 inch worth of food grade 1000 degree insulation between the walls.
There are a total of 10 removable racks 24 inches by 24 inches inside. There are also a total of 6 stainless steel burners inside this unit. Two of the burner are removable and can be used to grill food whenever necessary.
We placed 3 removable and replaceable water pans near the bottom section for ease of operation. The firebox is designed with 10 gauge stainless steel walls and has a diffuser inside the unit to spread the smoke evenly.
The doors have special Kason latches that are hydraulic and keep the pressure on them at all times. There is a fan connecting to the opening at the top to remove any unwanted smoke prior to opening the doors. There is also a damper in the exhaust tubing to control the temperature.
